Filoso Pinot Noir

Its grapes are fermented in a concrete egg system, where the wine is then aged, maintaining permanent movement through the same ovoid shape of its container. This causes the wine to evolve homogeneously, with the same temperature throughout the year, giving it a soft, but nervous structure and an exquisite, long and persistent palate, of pure fruit, without any trace of wood.
Tasting notes:
EGGO Blanc de Cal is light green in color, with golden tones. Aroma: it presents itself with a lot of character. Strong mineral intensity, such as stone, herbs, rue and pea. Flavor: unlike our Unique Terroir, it has great volume and texture, with great acidity that makes it very fresh and long-lasting. That mineral stone that is perceived in the nose is again perceived very strongly.

Features
It starts from two different vineyards, 70% from Gualtallary at 1,450 meters above sea level and the remaining 30% from Tupungato at 1,200 meters above sea level.
- Vinification: After pressing the grapes from both vineyards, the juices are gathered in the cement egg and it is expected that the alcoholic fermentation will naturally begin, which takes place between 18º to 21ºC. Once finished, part of the malolactic fermentation takes place. It is left in the same egg for at least five months, without separating it from the lees, which generates volume and expands its character. It is bottled directly from the egg to the bottle, without any intervention to stabilize or filter the wine.
- Harvest: By hand in 16 kg boxes, the same day in both vineyards.
